Maple Syrup Companies in Canada
Maple syrup producers are subject to the whips of the Federation of Quebec Maple Syrup Producers, a non-governmental organization that sets production quotas and prices for the world Maple Syrup market in the Canadian province of Quebec. Canada produces 71% of the world’s pure maple syrup, 91% of which comes from Quebec. After retiring as a mechanic in the early 1990s, Etienne St-Pierre, 69-year-old widower, founded a sugar farm that now produces 65,000 pounds of sugar a year and sells it outside Quebec. In his first year, he exported thousands of barrels of New Brunswick syrup to Maple Grove Farms in Vermont. Syrup, candies and baking blends are sold at Wal-Mart stores and other chains. Luc Bergeron’s Granville Island Maple Syrup Stand, where he sells maple products from his farm in Quebec, has been a fixture on the market since coming to Quebec 30 years ago and setting up the stall.
The conflict boiled over in 2013 when the authorities raided Cotes’ sugar stalls and hauled more than 100 maple syrup barrels for more than $125,000 in return for allegations that he unlawfully produced and marketed his products outside of the system. Much of the 1,000 tons of syrup, worth up to $30 million, was sold to buyers unaware of its origins and believing Maple farmers made it in neighbouring New Brunswick. Two Vermont companies that bought the stolen syrup, Maple Grove Farms and Highland Sugarworks, were not responding to requests for interviews.
A private organization that unites them and supports their interests is the Federation of Quebec Syrup Producers (FPAQ). Since 1989, FPAQ manufacturers have complied with a collective agreement to market their products.
The Great Northern Maple Products was founded in 1999 by Gary Coppola and Paule Veilleux. In 1995, maple producers formed Maple Weekend, an opportunity for the public to visit Maple farms, learn about the production process and traditions, and taste pure maple syrup from its source.

The strategic reserve of Maple Syrup, also known as the International Strategic Reserve (ISR), is a global strategic reserve of Maple Syrup located in warehouses in several rural Quebec cities. Syrup production takes place between February and April, between 20 and 25 days, when temperatures rise above freezing and pressure is created that forces the energy-rich juice (about 3 percent sugar) through holes in the tree trunks.
